We’re talking about Cinco de Mayo, the day when Mexico defeated the French in the Battle of Puebla. So, break out the tequila, dust off your sombrero, and get ready to fiesta like there’s no mañana!

Enjoying the Outdoors with Great Food and  Cocktails

There’s something about dining outdoors that adds an extra layer of enjoyment to a meal. Whether it’s the fresh air, the beautiful scenery, or the company of friends and family, alfresco dining is a great way to make any meal feel special. If you’re planning an outdoor meal, here are five recipes and liquid refreshment pairings that are sure to impress. 

Dining Al Fresco…. Who doesn’t LOVE dining Al Fresco?

What is Al fresco dining or dining alfresco exactly you ask? I’m glad you asked…. It is posh term for eating outside. LOL!

Here we only have Spring and Summer most times to al fresco dine and we should really take full advantage of it…I sure do!

It is my favorite style of dining because it is so casual and often times intimate.

So now after discussing what it is, let’s get down to recipes that are easy to prepare and Oh So Yummy! Mangia, my Bellas!  

Grilled Sirloin Potatoes & Onions

Being of Irish descent, when I think of any meal I always think of meat and potatoes. LOL. So that is what I will be sharing with you today. 

Beef Tacos

This is a perfect go to Meal on any day. Leftovers make a good taco salad bowl.
Course Main Course
Cuisine Mexican
Servings 12 Servings

Ingredients
  

  • 2 lbs Ground beef or ground turkey
  • 1 pkg Mexican spice mix or taco seasoning
  • 1 can Black beans-drained and rinsed
  • 1 can Corn
  • 1 med Onion-diced (Sautéed with the beef)
  • Salt/Pepper to taste
  • 1 Green Chilli Pepper (optional)

Toppings

  • 1 head Shredded lettuce
  • 3 med Diced tomatoes
  • 1-2 jalapeño-sliced thin
  • 1 16 oz Mexican Cheese-shredded
  • Taco Shells

Instructions
 

  • Cook and crumble the ground beef, sprinkling with the spices as it begins to crumble
  • Drain any excess grease and add the beans and corn
  • Stir to combine
  • Continue cooking and add the beans and corn
  • Taste and adjust spices as needed
  • Serve immediately or let cool and portion into freezer safe container

Spinach Watermelon Salad

Sweet and hydrating oh so colorful is this salad. It is also a crowd pleaser and is healthy as well as tasty.

Yummy Refreshment
Prep Time 10 minutes
Total Time 10 minutes
Servings 2 Glasses

Ingredients
  

  • 3 shots tequila
  • 2 shots orange flavored liqueur
  • 1 juice lime
  • 1 wedge lime
  • 1 cup coarse salt

Shake indgredients vigorously.

Instructions
 

  • Moisten the rim of the glass with lime
  • Turn glass over into coarse salt. Spin glass to run salt on rim.
  • Fill glass with ice cubes
  • Pour mixed margarita into glass
  • Garish with Lime Slice

Now the adults can be happy  tasting this paradise signature cocktail. It will have you envisioning white sandy beaches and translucent tropical waters.  Best part, you don’t have to leave home….   Awhh!

NOTE:
For the kiddos, they can have a margarita as well. Make them a Shirley Temple margarita by eliminating the alcohol. Be sure to put theirs in a margarita glass as well. They will love it. Mark the glass somehow so it indicates it is a non-alcoholic cocktail. Be creative…..

Again I like sharing this light dinner that is easy to make and has a bouquet of flavors that will have them asking you for more.

My motto, “Dinner doesn’t have to be boring”! I wish I was sitting there with you all enjoying a nice glass of margarita, oh well maybe someday.
