Homemade Tapioca Pudding

I think we all have our interpretation of what ”Comfort Food” is to us“. Just saying that statement, close you eyes and I’m sure everybody has some sort of image of what and who it reminds us of; Grandma, Mom or someone we cherish in our thoughts. Either still with us or passed on. It’s that warm and fuzzy feeling we get when we hear the words and then taste the flavors.

Well Tapioca Pudding, reminds me of my childhood. I can still see my Mom standing at the stove with an apron on cooking and making tapioca Pudding. I think I might’ve been the only one that liked it besides my Mom and I …. there were four of us. LOL.  I’ll bet some of you have never even had it or turn your nose up at the thought of it. It’s texture and it’s tastes is  similar to Rice Pudding.  Yet, I do not like Rice Pudding. LOL. Well here is the recipe and I hope you enjoy…

Homemade Tapioca Pudding

Indgredients 

  • 1 egg

  • 2- 3/4 C Milk

  • 1/3 C Sugar

  • 3 Tbsp Kraft MINUTE Tapioca

  • 1 Tbsp Vanilla Extract

 

  1. Whisk egg and milk in medium sauce pan until blended. Stir in sugar and tapioca. Let stand 5 min.

    Bring mixed ingredients to a full boil (A boil that does not stop bubbling when stirred). On medium heat, stirring constantly. Remove from heat. Stir in vanilla.

    Side note: At this point, I put mine into individual dessert dishes and I placed mine in the refrigerator because I like a cold.

    Cool 20 minutes. You can leave it out and serve it right after it has sat for 20 min. Again, I put mine in the fridge. Before I put it in the refrigerator or serving it I sprinkle fresh cinnamon on top.

  2. Microwave preparation: combine all ingredients except vanilla and a large microwavable bowl. Let’s stand 5 min. Microwave on high 10-12 min. or until mixture comes to a full boil, stirring every 3 min. Stir in vanilla. Cool 20 min.

  3. Chocolate Tapioca Pudding: prepare as directed, Increasing milk to 3 cups. Sugar to 1/2 cup

    Stand time 20 min.Sir in Semi Sweet Chocolate. Stir. Serve cold or room temperature.
