Halve and pound each breast to about a ½ thickness
Beat a large egg with warm water until fully mixes
Add the minced garlic, sea salt, and black pepper to the mixture and whisk
Place the Parmesan cheese in additional large bowl. Make sure that each chicken piece is wrapped in an egg mixture. Allow a free trickle of the excess egg
Put the Parmesan in it. With more Parmesan, scatter on top.
Press on the other side gently and then repeat and turn it. Shake off all access. Repeat with chicken leftovers.
In a large skillet, set a butter and oil over high heat.
Place the chicken and then move after three minutes when sides turn brown.
Push with a spatula softly, then turn over and do not move it again until it is brown.
Then push it softly to the dish with a spatula.
Notes
It is delicious the day you make it but it is also good reheated. This is definitely a keeper! Mangia.....
