Ingredients
  

  • 2 cloves garlic finely chopped
  • ¼ cup oil virgin olive
  • ¼ cup herb de Provence
  • 1 tbs kosher salt
  • ½ tsp black pepper freshly ground
  • lbs chicken whole
  • 1 lemon wedges

Instructions
 

  • Mix garlic, Herb de Provence, oil, salt, pepper in a small bowl
  • Rub mixture all over inside and outside of chicken
  • Place on a wire rack set inside roasting pan
  • Roast chicken until skin begins to brown

Notes

Preheat oven to 475°
  • Roast chicken until skin begins to brown, 25-30 minutes.
  • Reduce heat to 350° and roast until instant read thermometer (inserted into thigh) registers 165° Cook 25–30 minutes longer
Let Rest 10 minutes before Carving
Serve with lemon wedges
